S’mores Brownies

S’mores Brownies! Layers of biscuits, fudgy brownies, melted chocolate and toasty marshmallows on top! Get some in ya!

BASE

250 grams Krispie biscuits or graham crackers

70 grams melted butter

BROWNIE
220g butter
330g light brown sugar
100g sugar
4 eggs room temperature
2 tsp vanilla
85g cocoa powder
85g flour
½ tsp baking powder
½ tsp salt
100g chocolate chopped
36 marshmallows

INSTRUCTIONS 

Preheat oven to 180°C. Line a 9x9-in pan with parchment paper overhanging the sides.
Whizz biscuits and butter then place in the lined pan.

In a medium size saucepan over medium heat, melt butter.

Remove from heat and stir in sugars. Allow the mixture to cool

Whisk eggs and vanilla into the butter/sugar mixture.

Mix in cocoa powder. Gently fold in the flour, baking powder, and salt until just combined.
Pour the batter over the graham crackers and bake for 30 minutes.
After 30 minutes, remove the pan from the oven and top with chopped chocolate.

Allow the chocolate to sit for 3-5 minutes and then use a small offset spatula to spread the chocolate over the top of the brownies.

Arrange the marshmallows on top in rows and then return the pan to the oven for 5 minutes.

After 5 minutes, remove the pan from the oven and use a kitchen torch to toast the tops of the.

Or position the pan to the top rack of your oven and broil for 15-30 seconds. Allow the brownies to cool for 20-30 minutes before cutting into squares. Enjoy!
