Three Cheese Ultimate Nachos

Nachos is one of my top 3 favourite meals. If you’re looking for a first date idea then I’d recommend cooking up nachos or going out for Mexican. Reason being, you gotta be vulnerable when eating nachos or other Mexican food. You gotta use your hands and it can get messy! Top that with a margarita and you’re gonna have a good time!

These nachos are really simple to make and the smoked cheese topped with cotija cheese just adds a whole new dynamic to nachos that will blow your mind. Give it a go!

INGREDIENTS

2 tablespoons olive oil

1 onion, chopped

3 tablespoons chipotle sauce

4 cloves garlic, crushed

2 teaspoons ground cumin

1 teaspoon each ground coriander, smoked paprika and chilli flakes

1 x 390 gram can chickpeas, red kidney beans and black beans, rinsed and drained

400-gram can crushed tomatoes

400-grams beef mince

1 cup beer (I used a chilli lager)

200g corn chips

sea salt and ground pepper

TO SERVE

100g cheddar cheese

50g smoked cheddar cheese

1 lime

Diced avocado

Sour cream

Cotija cheese

Pickled shallot

Fresh radish, thinly sliced

Fresh coriander

Flakey salt

METHOD

Heat the oil in a large saucepan over a medium heat. Add the onion, season with salt and pepper. Cook for 10 minutes then stir in the beef mince, chipotle sauce, garlic and all the spices. 

Cook for 2 minutes then add all the beans, tomatoes and the beer.

Reduce the heat to low and simmer for 45-50 minutes, stirring occasionally, until reduced and thickened.

Chop up avocado and place in a bowl. Squeeze in the juice of 1 lemon, season with salt and pepper and give it a mix.

Grease a sheet tray and on the chips topped with the cooked beef mince, cheddar and smoked cheddar cheese. Place into a 180°C oven for 8-10 minutes.

Add the avocado, sour cream, cotija cheese, pickled shallots, sliced radish, and coriander.

season with salt and serve.
